RECIPE: Gin & Tonic Lemon Cake

One of the main things I've been doing through lock down is baking and cooking -I've always loved baking and cooking but I normally only get time to cook dinner nowadays so I thought I'd make the most of it and get on Pinterest for some cheeky ideas and recipe inspiration and give them ago. I've got lots of recipes to post that I've loved doing but a Gin & Tonic Lemon cake was definitely one of my favs- Nick's too. I saw the idea on Jane's Patisserie (one of my favs on Facebook and Instagram) but adapted it slightly!





It's super easy to make and realllllly yummy - this will be a perfect Summer Party (if we're allowed them!) cake:

INGREDIENTS:

FOR CAKE:
250g Caster Sugar
250g Butter
250g Self Raising Flour
5 Eggs
50ml Gin
1 Lemon - Zest and Juice

FOR ICING: 
Butter, icing sugar, a dash of lemon juice, a dash of gin, and a dash of tonic (adjust until preferred taste).

METHOD:
Mix butter and sugar until soft and creamy
Beat in 1 egg at a time
Add flour and fold in (do this in several goes)

Bake in the Oven for 25 Minutes at 170'c. 





Super easy and super tasty - win win really!
